First 5 gallon mead batch.

First batch in 6.5 gallon carboy.

Adjuncts
15.00 pounds Honey (Clover)  
Yeast
WYeast Dry Mead 4632 — Liquid — 1 package
Procedure

Dissolve honey into water.

Bring to 195+/- degrees, remove from heat,

Cool to 70-75 degrees

Transfer to bucket, add yeast, 2.5 tsp yeast nutrient and 5 tsp diammonium phosphate.

Transfer to 7 gallon carboy.  Ferment at 72+3 degrees.

Fermentation
Primary: 13 days @ 72+3° F
